Low-Carb Zucchini Lasagna Bake

4 medium zucchini, sliced lengthwise into thin strips

1 lb ground turkey or beef (your choice)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup marinara sauce (sugar-free or low-carb preferred)

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Olive oil for cooking

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Use a mandoline or sharp knife to slice the zucchini into thin strips. Place the slices on a kitchen towel, sprinkle with salt, and let them sit for 15-20 minutes to draw out excess moisture. Afterward, pat them dry with another towel.

      Cook the Meat: In a large skillet over medium heat, add a drizzle of olive oil. Sauté minced garlic until fragrant, about 1 minute. Add ground turkey or beef, cooking until browned and fully cooked. Season with oregano, basil, salt, and pepper. Drain any excess fat and remove from heat.

        Mix Ricotta and Egg: In a medium mixing bowl, combine ricotta cheese, egg, half of the Parmesan cheese, salt, and pepper. Mix well until smooth.

          Assemble the Lasagna: In a 9x13 inch baking dish, spread a layer of marinara sauce on the bottom. Place a layer of zucchini strips on top of the sauce. Next, spread half of the ricotta mixture over the zucchini. Top with a layer of the cooked meat and a sprinkle of mozzarella cheese. Repeat the layers: marinara sauce, zucchini strips, ricotta mixture, meat, and mozzarella.

            Finish with Cheese: After layering, spread the remaining marinara sauce on top. Finish with the remaining mozzarella and Parmesan cheese.

              Bake: Cover the baking dish with aluminum foil (avoid touching the cheese) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                Cool and Serve: Allow the lasagna to cool for about 10 minutes before slicing. Garnish with fresh basil leaves if desired.
