Loaded Hatch Chili Potato Wedges

4 large russet potatoes, washed and cut into wedges

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 cup cooked Hatch green chilies, diced

½ cup sour cream

¼ cup fresh cilantro, chopped

3 green onions, sliced

1 avocado, diced

Extra Hatch green chilies for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potato Wedges: In a large bowl, combine the potato wedges, olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Toss until the wedges are well-coated.

      Bake the Wedges: Spread the potato wedges in a single layer on a baking sheet lined with parchment paper. Bake for about 30-35 minutes, turning halfway through, until they are golden brown and crispy.

        Add Toppings: Once the potato wedges are done, remove them from the oven and sprinkle the shredded cheddar cheese evenly over the hot wedges. Return to the oven for about 5 minutes, or until the cheese is melted.
