1 cup fresh basil leaves

1/4 cup pine nuts (toasted)

1 garlic clove

1/2 cup grated Parmesan cheese

1/3 cup extra virgin olive oil

Juice and zest of 1 lemon

Salt and pepper to taste

1 cup cherry tomatoes (halved)

8 oz fresh mozzarella balls (bocconcini or ciliegine)

Fresh basil leaves for garnish

Balsamic glaze for drizzling

Make the Lemon Pesto: In a food processor, combine the basil leaves, toasted pine nuts, garlic clove, Parmesan cheese, lemon juice, lemon zest, salt, and pepper. Pulse until coarsely blended. With the processor running, gradually stream in the olive oil until the mixture is smooth and creamy.

    Prepare the Caprese Spoons: In a mixing bowl, combine the halved cherry tomatoes and mozzarella balls. Drizzle some of the lemon pesto over the mixture, tossing gently to coat. Adjust seasoning with salt and pepper as needed.

      Assemble the Spoons: Take small serving spoons or bite-sized cups. Place a small amount of the tomato and mozzarella mixture in each spoon, allowing some to pile slightly for a beautiful presentation.
