1 large head of cauliflower

3 tablespoons olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley or basil for garnish (optional)

Instructions
 

Prepare the Cauliflower: Start by removing the green leaves from the cauliflower head and trimming the stem. Carefully cut the cauliflower into 1-inch thick slices (steaks), ensuring you keep the slices intact. You should get about 3-4 good-sized steaks from a single head, depending on its size.

    Make the Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, garlic powder, smoked paprika, dried oregano, dried thyme, salt, and pepper until well combined.

      Marinate the Steaks: Place the cauliflower steaks in a large zip-top bag or shallow dish. Pour the marinade over the steaks, ensuring they are thoroughly coated. If using a bag, seal it and gently shake to coat. Let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

        Preheat the Grill or Oven: If grilling, preheat your grill to medium heat (about 400°F). If baking, preheat your oven to 425°F and line a baking sheet with parchment paper.

          Cook the Steaks: If grilling, place the cauliflower steaks directly on the grill grates and cook for 5-7 minutes on each side, until grill marks appear and they become tender. If baking, place the marinated steaks on the prepared baking sheet and bake for 20-25 minutes, flipping halfway through, until they are golden brown and tender.

            Serve: Once cooked, remove the cauliflower steaks from the grill or oven. Let them rest for a few minutes. Garnish with fresh parsley or basil if desired, and serve warm.
