Ingredients

1 pound large shrimp, peeled and deveined

4 cloves garlic, minced

2 tablespoons olive oil

Zest and juice of 2 lemons

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

8 small corn or flour tortillas

1 cup shredded red cabbage

½ cup fresh cilantro, chopped

1 avocado, sliced

½ cup crumbled feta cheese (optional)

Lime wedges for serving

Instructions

Marinate the Shrimp: In a medium bowl, combine the peeled shrimp, minced garlic, olive oil, lemon zest, lemon juice, smoked paprika, red pepper flakes, salt, and black pepper. Toss well to coat the shrimp evenly. Let it marinate for at least 20 minutes for the flavors to meld.

Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside.

Prepare the Tortillas: While the shrimp is cooking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable. You can also wrap them in aluminum foil and warm them in the oven.

Assemble the Tacos: Take a warm tortilla and add a generous scoop of the cooked shrimp. Top with shredded red cabbage, fresh cilantro, and avocado slices. If desired, sprinkle feta cheese over the top for added creaminess.

Serve: Squeeze fresh lime juice over the tacos for an extra citrus kick. Serve immediately with additional lime wedges on the side. Enjoy your zesty shrimp tacos!
