Ingredients

1.5 lbs pork tenderloin

2 tablespoons olive oil

2 tablespoons Dijon mustard

3 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional for heat)

Zest of 1 lemon

Instructions

Prepare the Marinade: In a bowl, mix together the olive oil, Dijon mustard, garlic, rosemary, thyme, parsley, paprika, salt, pepper, red pepper flakes, and lemon zest. This herb mixture will infuse amazing flavors into the pork.

Marinate the Pork: Pat the pork tenderloin dry with paper towels. Rub the herb marinade all over the tenderloin, coating it evenly. For the best flavor, let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours if you have the time.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure even cooking.

Air Fry the Tenderloin: Place the marinated pork tenderloin in the air fryer basket, ensuring it is not overcrowded. Cook for 20-25 minutes, flipping halfway through, until the internal temperature reaches 145°F (63°C). Use a meat thermometer for accuracy.

Rest the Meat: Once cooked, remove the pork tenderloin from the air fryer and let it rest on a cutting board for 5-10 minutes. This allows the juices to redistribute, keeping the pork juicy.

Slice and Serve: Slice the tenderloin into ½-inch thick pieces and serve garnished with fresh herbs. Drizzle with any leftover herb marinade or a squeeze of fresh lemon juice for an extra burst of flavor.
