Honey Mustard Glazed Salmon Salad

Ingredients
  

2 salmon fillets (6 oz each)

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

4 cups mixed salad greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1/2 cucumber, sliced

1/4 red onion, thinly sliced

1 avocado, diced

1/4 cup walnuts, roughly chopped

Fresh lemon wedges for serving

Instructions
 

Prepare the Glaze: In a small bowl, whisk together the honey, Dijon mustard, olive oil, salt, and pepper until smooth and well combined.

    Glaze the Salmon: Preheat your grill or skillet over medium-high heat. Place the salmon fillets on a plate and generously brush the honey mustard glaze over the top and sides.

      Cook the Salmon: Cook the salmon for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has a nice caramelized crust. Keep the rest of the glaze for drizzling later.

        Assemble the Salad: While the salmon is cooking, prepare the salad. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, avocado, and walnuts.

          Dress the Salad: Once the salmon is cooked, let it rest for a couple of minutes. Drizzle a little of the leftover honey mustard glaze over the salad, then toss gently to combine.
