2 salmon fillets (6 oz each)

3 tablespoons honey

2 tablespoons mustard (Dijon or yellow)

1 tablespoon olive oil

Salt and pepper to taste

4 cups mixed salad greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1/2 cucumber, sliced

1/4 red onion, thinly sliced

1 avocado, diced

1 tablespoon fresh dill or parsley for garnish

Lemon wedges for serving (optional)

Prepare the Glaze: In a small bowl, whisk together honey, mustard, olive oil, salt, and pepper until fully combined. Set aside 2 tablespoons of the mixture for drizzling on the salad later.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the remaining honey mustard glaze over them. Let them marinate for at least 15 minutes to enhance the flavors.

      Cook the Salmon: Preheat your grill or oven broiler. If grilling, preheat the grill to medium-high. If broiling, preheat the oven and place an oven-safe dish on the middle rack. Cook the salmon for 4-6 minutes per side, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork. Baste the salmon with the marinade while cooking for added flavor.

        Assemble the Salad: While the salmon is cooking, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and diced avocado in a large bowl. Toss to combine.

          Dress the Salad: Drizzle the reserved honey mustard dressing over the salad and toss gently to coat.
