Ingredients

2 salmon fillets

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper, to taste

4 cups mixed salad greens (spinach, arugula, and kale)

1 cup cherry tomatoes, halved

1 cucumber, sliced

1/4 red onion, thinly sliced

1 avocado, diced

1/4 cup feta cheese, crumbled

Fresh lemon juice, for drizzling

Optional: fresh herbs (parsley or dill) for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Honey Mustard Glaze: In a small bowl, whisk together the honey, Dijon mustard, olive oil, salt, and pepper until well combined.

Season the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Brush the honey mustard glaze generously over each fillet, ensuring they are well coated.

Bake the Salmon: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Remove from the oven and let it rest for a few minutes.

Prepare the Salad Base: While the salmon is baking, in a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and avocado. Toss gently to mix the ingredients.

Assemble the Salad: Once the salmon is ready, flake it into large pieces and place it on top of the salad. Sprinkle crumbled feta cheese over the salad.

Finish with Lemon: Drizzle a little fresh lemon juice over the top for added zest and garnish with fresh herbs if desired.

Serve: Serve the salad immediately while the salmon is warm, either in individual bowls or on a large platter.
