Honey Mustard Glazed Salmon Salad

Ingredients
  

2 salmon fillets (6 ounces each)

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

6 cups mixed salad greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1/2 cucumber, sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, toasted

2 tablespoons balsamic vinaigrette

Instructions
 

Prepare the Glaze: In a small bowl, whisk together the honey, Dijon mustard, olive oil, salt, and pepper until well combined. This will be your honey mustard glaze.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Glaze the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Brush the honey mustard glaze generously over the top of each salmon fillet.

        Bake the Salmon: Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork and has a nice golden-brown glaze.
