1/4 cup Dijon mustard

1/4 cup honey

1 tablespoon apple cider vinegar

1 tablespoon olive oil

1/2 teaspoon garlic powder

Salt and pepper to taste

For the Salmon:

2 salmon fillets (about 6 ounces each)

Olive oil for brushing

Salt and pepper to taste

For the Salad:

4 cups mixed greens (arugula, spinach, and kale)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/2 cucumber, diced

1/3 cup crumbled feta cheese

1/4 cup chopped walnuts or pecans

Fresh lemon juice for drizzling

Prepare the Honey Mustard Glaze: In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, olive oil, garlic powder, and a pinch of salt and pepper until smooth. Set aside.

    Cook the Salmon: Preheat your grill or oven to 400°F (200°C). Brush the salmon fillets lightly with olive oil and season with salt and pepper. Place the salmon skin-side down on a prepared grill or baking sheet. Brush generously with the honey mustard glaze.

      Grill or Bake the Salmon: Cook the salmon for about 8-10 minutes on the grill or 15-20 minutes in the oven, brushing occasionally with more glaze, until the salmon flakes easily with a fork.
