For the Salmon:

2 salmon fillets (6 oz each)

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

For the Salad:

4 cups mixed greens (arugula, spinach, and kale)

1 cup cherry tomatoes, halved

1 cucumber, sliced

1 avocado, diced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, toasted

Fresh lemon juice, for drizzling

For the Dressing:

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and pepper to taste

Prepare the Salmon Glaze: In a small bowl, whisk together honey, Dijon mustard, and olive oil until smooth. Season with salt and pepper.

    Marinate the Salmon: Pat the salmon fillets dry with a paper towel. Place in a shallow dish and pour the honey mustard glaze over them, ensuring they’re well coated. Marinate for at least 15 minutes (you can also marinate longer in the fridge for more flavor).
