4 salmon fillets (about 6 oz each)

4 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 tablespoon apple cider vinegar

6 cups mixed salad greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, sliced

1/2 red onion, thinly sliced

1 avocado, diced

1/4 cup walnuts, chopped (toasted if desired)

Fresh dill or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Glaze: In a small bowl, whisk together the honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper to create a smooth glaze.

      Glaze the Salmon: Place the salmon fillets skin-side down on a lined baking tray. Brush the honey mustard glaze generously over the top of each fillet, ensuring they are well coated.
