2 salmon fillets (6 oz each)

3 tablespoons honey

3 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and black pepper, to taste

4 cups mixed salad greens (e.g., spinach, arugula, romaine)

1 cup cherry tomatoes, halved

1/2 cucumber, sliced

1/4 red onion, thinly sliced

1/4 cup walnuts, chopped (optional)

1 avocado, diced

Lemon wedges, for serving

Prepare the Glaze: In a small bowl, whisk together honey, Dijon mustard, and olive oil until well combined. Set aside a couple of tablespoons for drizzling later.

    Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

      Season the Salmon: Place the salmon fillets on the prepared baking sheet. Season each fillet with salt and black pepper. Brush the honey mustard glaze generously over the top of each salmon fillet.

        Bake the Salmon: Bake the salmon in the preheated oven for about 12-15 minutes, or until it flakes easily with a fork and is cooked to your preference.
