Ingredients

4 salmon fillets (about 6 oz each)

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper, to taste

5 cups mixed salad greens (e.g., spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1/2 cup cucumber, sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, toasted (optional)

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Make the Glaze: In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper until well combined.

Prepare the Salmon: Place the salmon fillets skin-side down on the prepared baking sheet. Brush the honey mustard glaze generously over each fillet.

Bake the Salmon: Bake the salmon in the preheated oven for 12–15 minutes, or until the fish flakes easily with a fork and is cooked through.

Prepare the Salad Base: While the salmon is baking, in a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber slices, and red onion. Toss gently to combine.

Assemble the Salad: Once the salmon is cooked, remove it from the oven and let it rest for a couple of minutes. Then, flake the salmon into large pieces and place it on top of the prepared salad.

Add Cheese and Nuts: Sprinkle the crumbled feta cheese and toasted walnuts (if using) over the salad.

Finish and Serve: Serve the salad with lemon wedges on the side for an extra burst of flavor. Drizzle any remaining honey mustard glaze over the top if desired.
