Honey Mustard Chicken and Apple Skewers

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

2 medium apples (such as Honeycrisp or Fuji), cored and cut into 1-inch cubes

1/4 cup honey

1/4 cup Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

Fresh rosemary or thyme sprigs, for garnish

Prepare the Marinade: In a medium bowl, whisk together honey, Dijon mustard, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

    Marinate the Chicken: Add the cubed chicken to the marinade, stirring to coat all pieces evenly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).

      Preheat the Grill: If using a grill, preheat it to medium-high heat . If using an oven, preheat the broiler.

        Assemble the Skewers: Once the chicken has marinated, thread the chicken and apple cubes onto the skewers, alternating between the two. Leave a little space between each piece to ensure even cooking.

          Brush with Olive Oil: Lightly brush the assembled skewers with olive oil to prevent sticking and enhance flavor.
