Ingredients

For the Honey Garlic Chicken:

4 boneless, skinless chicken thighs

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup honey

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 teaspoon sesame oil

1 teaspoon grated ginger

1 tablespoon chopped green onions (for garnish)

For the Sweet Corn Fritters:

1 cup fresh or canned sweet corn (drained)

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup milk

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 cup finely chopped red bell pepper

1/4 cup chopped fresh cilantro (optional)

Olive oil for frying

Instructions

Prepare the Honey Garlic Chicken:

    - Season the chicken thighs with salt and pepper on both sides.

      - In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and sear until golden and cooked through, about 5-7 minutes per side. Remove from the pan and set aside.

        Make the Sauce:

          - In a bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, sesame oil, and grated ginger until well combined.

            - Pour the honey-garlic mixture into the skillet, scraping up any browned bits from the chicken. Bring to a simmer and let it cook for about 2-3 minutes until slightly thickened.

              Combine Chicken and Sauce:

                - Return the chicken thighs to the skillet, turning them to coat in the honey garlic sauce. Let them simmer in the sauce for an additional 5 minutes.

                  - Once coated and heated through, garnish with chopped green onions and set aside.

                    Prepare the Sweet Corn Fritters:

                      - In a bowl, combine the flour, cornmeal, baking powder, salt, and pepper. Mix well.

                        - In another bowl, whisk together the eggs and milk until smooth. Add the drained sweet corn, red bell pepper, and cilantro (if using).

                          - Gradually stir the wet ingredients into the dry ingredients until just combined; do not overmix.

                            Fry the Fritters:

                              - Heat a non-stick skillet over medium heat and add a drizzle of olive oil.

                                - Once the oil is hot, drop spoonfuls of the fritter batter into the skillet, flattening them slightly with the back of a spatula.

                                  - Cook for 3-4 minutes on each side, or until golden and crispy. Transfer to a paper towel-lined plate to drain excess oil.

                                    Serve:

                                      - Plate the Honey Garlic Chicken alongside the Sweet Corn Fritters. Drizzle extra honey garlic sauce over the chicken if desired. Serve immediately and enjoy your delicious meal!
