Honey Dijon Chicken & Rice Skillet

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long-grain white rice

2 cups low-sodium chicken broth

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: In a bowl, combine honey, Dijon mustard, salt, and pepper. Add the chicken pieces and toss to coat. Let it marinate for about 15 minutes to infuse the flavors.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until they become translucent. Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

      Brown the Chicken: Increase the heat to medium-high and add the marinated chicken pieces to the skillet. Sear the chicken for about 5-7 minutes until they are golden brown and cooked through. Stir occasionally for even cooking.

        Cook the Rice: Once the chicken is browned, pour in the chicken broth and add the rice, thyme, and paprika. Stir well to combine, then bring it to a boil.

          Simmer: Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 18-20 minutes, or until the rice is cooked and has absorbed most of the liquid.

            Add Peas: Uncover the skillet, add the frozen peas, and stir gently. Cover again and let it sit for an additional 5 minutes to heat the peas through.
