2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs

1/4 cup honey

2 tablespoons chipotle peppers in adobo sauce, minced

2 tablespoons soy sauce

1 tablespoon lime juice

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper, to taste

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 avocado, sliced

1/4 cup chopped fresh cilantro

Lime wedges, for serving

Marinate the Chicken: In a bowl, prepare the marinade by combining honey, minced chipotle peppers, soy sauce, lime juice, minced garlic, cumin, smoked paprika, and a pinch of salt and pepper. Add the chicken thighs, making sure they are evenly coated. Let marinate for at least 30 minutes (or up to 2 hours in the fridge for best flavor).

    Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, remove the chicken from the marinade and place in the skillet. Cook for around 5-7 minutes on each side or until the chicken is cooked through and has a nice caramelized exterior (165°F internal temperature). Remove from skillet, let rest for a few minutes, then dice into bite-sized pieces.

      Prepare the Rice Bowl: In the same skillet, if desired, add black beans and corn to warm them up (about 2-3 minutes).
