2 medium sweet potatoes, peeled and thinly sliced

1 cup sharp cheddar cheese, shredded

1 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/4 cup cold unsalted butter, cubed

4-6 tablespoons ice water

1 egg (for egg wash)

Fresh herbs (such as parsley or chives) for garnish

Instructions
 

Prepare the Pie Crust:

    - In a large mixing bowl, whisk together the flour, salt, black pepper, thyme, and rosemary.

      - Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.

        - Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Avoid overmixing. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

          Preheat the Oven:

            - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

              Prepare the Filling:

                - While the dough is chilling, prepare the sweet potatoes. In a bowl, toss the sliced sweet potatoes with a pinch of salt and a splash of olive oil. Let them sit for a few minutes.

                  Roll Out the Dough:
