½ teaspoon salt

½ teaspoon sugar

½ cup unsalted butter, cold and cubed

4-5 tablespoons ice water

For the Filling:

1 cup ricotta cheese

½ cup grated Parmesan cheese

1 tablespoon fresh thyme leaves, chopped

1 tablespoon fresh basil, chopped

1 garlic clove, minced

Salt and pepper, to taste

2-3 medium tomatoes, thinly sliced

1 tablespoon olive oil, for drizzling

1 egg, beaten (for egg wash)

For Garnish:

Fresh basil leaves, for serving

A drizzle of balsamic glaze (optional)

Instructions
 

Prepare the Dough:

    - In a mixing bowl, combine the all-purpose flour, salt, and sugar. Add the cubed cold butter and mix it with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

      - Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Form it into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.

        Make the Filling:

          - In a medium bowl, combine the ricotta cheese, Parmesan cheese, thyme, basil, and minced garlic. Season with salt and pepper to taste. Mix until well combined and set aside.

            Preheat the Oven:

              - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

                Roll Out the Dough:

                  - On a lightly floured surface, roll out the chilled galette dough into a large circle (about ¼ inch thick). Cut the dough into small squares or circles (approximately 4 inches across).

                    Assemble the Galette Bites:

                      - Place a tablespoon of the ricotta filling in the center of each dough piece. Top with a few slices of tomato, then fold the edges of the dough over the filling, creating little pleats or a rustic border. Place the galette bites on the prepared baking sheet.

                        Egg Wash:
