Ingredients
  

1 lb sirloin steak, cut into bite-sized pieces

2 tablespoons olive oil

Salt and black pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon red wine vinegar

1 tablespoon fresh lime juice

1 cup fresh parsley, finely chopped

1/4 cup fresh cilantro, finely chopped

1/4 cup red onion, finely chopped

2-3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Instructions
 

Prepare the Steak:

    Season the steak bites with salt, black pepper, garlic powder, and onion powder. Drizzle with 1 tablespoon of olive oil and let sit for about 10-15 minutes to allow the seasonings to penetrate the meat.

      Make the Chimichurri Sauce:

        In a mixing bowl, combine the parsley, cilantro, red onion, minced garlic, red wine vinegar, lime juice, and red pepper flakes (if using). Drizzle in the remaining tablespoon of olive oil, and mix well until the ingredients are fully incorporated. Adjust the seasoning with salt and pepper to taste. Set aside.

          Cook the Steak Bites:

            Heat a large cast-iron skillet or non-stick frying pan over medium-high heat. Once hot, add the steak bites in a single layer. Cook for about 2-3 minutes on each side or until they reach your desired level of doneness; these should be nicely browned on the outside while remaining juicy on the inside.

              Serve:

                Once cooked, remove the steak bites from the skillet and let them rest for a minute. Serve warm on a platter, drizzled with the chimichurri sauce. You can also serve extra chimichurri on the side for dipping.

                  Optional Garnish:
