For the Dough:

2 ½ cups all-purpose flour

½ cup granulated sugar

2 tsp cocoa powder

1 tsp baking soda

1 tsp salt

1 large egg

½ cup buttermilk, at room temperature

⅓ cup vegetable oil

2 tbsp red food coloring (gel or liquid)

1 tsp vanilla extract

For the Filling:

½ cup brown sugar, packed

2 tbsp ground cinnamon

¼ cup unsalted butter, softened

1 cup chopped pecans (optional)

For the Cream Cheese Frosting:

4 oz cream cheese, softened

¼ cup unsalted butter, softened

1 tsp vanilla extract

2 cups powdered sugar

2-4 tbsp milk (to desired consistency)

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until well combined.

      - In another bowl, whisk the egg, buttermilk, vegetable oil, red food coloring, and vanilla extract until smooth.

        - Pour the wet ingredients into the dry ingredients and mix until a soft dough forms. If the dough is too sticky, add a little more flour.

          Knead the Dough:

            - Transfer the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.

              - Place the dough in a greased bowl, cover with a kitchen towel or plastic wrap, and let it rise in a warm area for 1 hour, or until doubled in size.

                Make the Filling:

                  - In a small bowl, combine brown sugar and cinnamon. Set aside.

                    - Roll the softened butter into an even layer over the risen dough using a rolling pin, leaving a small border around the edges.

                      Assemble the Rolls:

                        - Generously sprinkle the cinnamon-sugar mixture over the buttered dough, followed by the chopped pecans if using.

                          - Starting from one edge, carefully roll the dough tightly into a log. Pinch the seam to seal.

                            - Slice the roll into 12 even pieces using a sharp knife or dental floss and place them in a greased baking dish, leaving a little space between each roll.

                              Second Rise:

                                - Cover the rolls with a towel and let them rise again for about 30 minutes until puffed up.

                                  Bake:

                                    - Preheat the oven to 350°F (175°C).

                                      - Bake the rolls in the preheated oven for 20-25 minutes until they are cooked through and slightly golden.

                                        Prepare Frosting:

                                          - While the rolls are baking, whip together the cream cheese, butter, vanilla extract, and powdered sugar in a medium bowl. Add milk a tablespoon at a time until the frosting reaches your desired consistency.

                                            Frost and Serve:

                                              - Once the rolls are baked, remove them from the oven and allow them to cool for a few minutes before spreading the cream cheese frosting on top.
