1 medium onion, diced

3 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 medium pumpkin (about 2-3 lbs), peeled and cubed

1 cup dried green or brown lentils, rinsed

4 cups vegetable broth

1 can (14 oz) diced tomatoes

1 tsp ground cumin

1 tsp ground coriander

½ tsp smoked paprika

½ tsp dried thyme

½ tsp salt (to taste)

¼ tsp black pepper (to taste)

2 cups kale or spinach, roughly chopped

2 tbsp olive oil

Fresh parsley (for garnish)

Optional: a squeeze of lemon juice for brightness

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes or until the vegetables start to soften. Add the minced garlic and sauté for another minute until fragrant.

    Add Spices: Stir in the ground cumin, coriander, smoked paprika, thyme, salt, and black pepper. Cook for another 1-2 minutes to toast the spices, stirring frequently.

      Introduce the Pumpkin and Lentils: Add the cubed pumpkin and rinsed lentils to the pot. Stir well to combine them with the sautéed vegetables and spices.

        Add Liquids: Pour in the vegetable broth and diced tomatoes (with their juices). Bring the mixture to a boil.
