1 cup pearl barley

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 carrots, peeled and diced

2 stalks celery, diced

1 bell pepper (red or yellow), diced

2 medium potatoes, diced

1 zucchini, diced

1 cup green beans, trimmed and chopped

1 can (14 oz) diced tomatoes, with juice

6 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Barley: Rinse the pearl barley under cold water and drain. Set aside.

    Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing for about 3-4 minutes until the onion becomes translucent.
