1 medium zucchini (about 1 cup, grated)

1/2 cup unsweetened applesauce

1/2 cup coconut sugar (or brown sugar)

1/4 cup pure maple syrup

1/4 cup almond butter (or any nut/seed butter)

1 teaspoon vanilla extract

1 cup whole wheat flour (or gluten-free flour)

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (dairy-free, if desired)

Optional: chopped nuts (walnuts or pecans for added crunch)

Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan, or line it with parchment paper for easy removal.

    Prepare the zucchini: Grate the zucchini finely using a box grater. If it’s very watery, gently squeeze out excess moisture using a clean kitchen cloth or paper towel.

      Mix wet ingredients: In a large mixing bowl, combine the grated zucchini, applesauce, coconut sugar, maple syrup, almond butter, and vanilla extract. Stir until all ingredients are well blended.

        Combine dry ingredients: In another bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, and sea salt.
