Healthy Greek Chicken Pita Wraps

2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

4 whole wheat pita breads

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup red onion, thinly sliced

1 cup baby spinach or mixed greens

½ cup feta cheese, crumbled

¼ cup Kalamata olives, pitted and sliced

½ cup plain Greek yogurt

1 tablespoon lemon juice

1 teaspoon honey

Fresh dill or parsley for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, mix the olive oil, oregano, garlic powder, salt, and pepper. Coat the chicken breasts in this mixture and let them marinate for at least 30 minutes (or overnight in the refrigerator for best results).

    Cook the Chicken: Preheat your grill or stovetop skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Remove from heat and let it rest for 5 minutes before slicing it into thin strips.

      Prepare the Sauce: In another bowl, combine Greek yogurt, lemon juice, honey, salt, and pepper. Mix well until you have a smooth sauce. Adjust seasoning to taste.

        Assemble the Wraps: Gently warm the pita breads in a skillet or microwave for a few seconds. Lay one pita on a plate and layer with baby spinach, sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese. Drizzle some of the yogurt sauce over the top.

          Fold and Serve: Carefully fold the pita in half to enclose the filling. Secure with a toothpick if necessary. Garnish with fresh dill or parsley if desired. Repeat for the remaining pitas.
