Healthy Greek Chicken Pita Wraps

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 whole grain pita pockets

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup spinach or mixed greens

1/2 red onion, thinly sliced

1/2 cup crumbled feta cheese

1/4 cup Kalamata olives, pitted and sliced

1/2 cup tzatziki sauce (store-bought or homemade)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, dried oregano, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat them well. Let it marinate for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Once hot, remove the chicken from the marinade and grill for about 6-7 minutes per side or until fully cooked (internal temperature should reach 165°F/75°C). Allow the chicken to rest for a few minutes before slicing.

      Prepare the Vegetables: While the chicken is cooking, prepare the vegetables by halving the cherry tomatoes, dicing the cucumber, slicing the red onion, and washing the greens.

        Assemble the Pitas: Warm the pita pockets slightly in the oven or on the grill for about 1-2 minutes. Slice each pita pocket open.

          Fill the Pitas: Start with a layer of spinach or greens at the bottom of each pita. Add sliced grilled chicken, cherry tomatoes, cucumbers, sliced red onion, feta cheese, and Kalamata olives.

            Drizzle with Tzatziki: Finish off each wrap by drizzling them with tzatziki sauce. You can also serve additional sauce on the side for dipping.

              Serve: Wrap the pitas securely and serve with extra veggies or a side salad if desired.
