Healthy Greek Chicken Pita Wraps

2 large whole wheat pita breads

2 boneless, skinless chicken breasts (about 1 lb)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup plain Greek yogurt

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)

Feta cheese, crumbled (optional)

Fresh spinach or arugula for garnish

Instructions
 

Marinate the Chicken: In a medium bowl, combine olive oil, garlic powder, paprika, oregano, salt, and pepper. Add the chicken breasts and coat them evenly with the marinade. Cover and allow to marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C). Remove from heat and let rest for a few minutes before slicing into thin strips.

      Prepare the Tzatziki Sauce: In a small bowl, mix the Greek yogurt, lemon juice, dill, salt, and pepper. Adjust seasoning to taste and set aside.

        Prepare the Vegetables: In another bowl, combine cherry tomatoes, cucumber, and red onion. Drizzle with a little olive oil and season with salt and pepper.

          Assemble the Wraps: On each whole wheat pita, layer a handful of spinach or arugula, followed by a generous portion of sliced chicken, the vegetable mixture, and a dollop of tzatziki sauce. If desired, sprinkle some crumbled feta cheese on top.
