2 cups cooked chicken breast, shredded (preferably grilled)

4 whole wheat pita breads

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1 cup red onion, thinly sliced

1/2 cup feta cheese, crumbled

1 cup mixed greens (spinach, arugula, or lettuce)

1/4 cup Kalamata olives, pitted and sliced

1/4 cup plain Greek yogurt

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh lemon wedges, for serving

Prepare the Dressing: In a small bowl, whisk together the Greek yogurt, olive oil, red wine vinegar, dried oregano, salt, and pepper until smooth. Set aside to allow the flavors to meld.

    Combine the Salad Ingredients: In a large mixing bowl, add the diced cucumber, halved cherry tomatoes, sliced red onion, crumbled feta cheese, mixed greens, and sliced Kalamata olives. Toss gently to combine.

      Add the Chicken: Include the shredded chicken into the salad mixture. Pour the yogurt dressing over the chicken and vegetables, tossing everything together until well-coated.
