Healthy Apple Oat Snack Bars

Ingredients
  

2 cups rolled oats

1 cup unsweetened apple sauce

1 cup diced apples (preferably Granny Smith or Honeycrisp)

1/2 cup almond butter (or any nut butter of choice)

1/4 cup honey or maple syrup

1/2 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Combine wet ingredients: In a large bowl, mix together the unsweetened apple sauce, almond butter, honey (or maple syrup), vanilla extract, and salt until smooth.

      Mix dry ingredients: In another bowl, combine the rolled oats, diced apples, cinnamon, chopped nuts, and raisins or dried cranberries if using. Stir until well incorporated.

        Combine everything: Pour the wet mixture into the dry ingredient bowl and mix thoroughly until all the oats and apples are well-coated with the mixture.

          Press into the baking dish: Transfer the mixture into the prepared baking dish. Press it down firmly with the back of a spatula or your hands to create an even layer.

            Bake the bars: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set.

              Cool and cut: Once done, remove from oven and let cool completely in the baking dish. Once cool, lift the bars out using the parchment paper overhang and cut into squares or rectangles.

                Store: Enjoy immediately or store in an airtight container in the refrigerator for up to one week. These bars can also be frozen for longer shelf life!
