Ingredients

1 pre-made pizza dough (store-bought or homemade)

1 cup salsa verde (preferably made with Hatch chilis)

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1 cup fresh spinach, chopped

1 medium red bell pepper, diced

1 small red onion, thinly sliced

1/2 cup corn kernels (fresh, frozen, or canned)

2 large eggs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, for garnish

Crushed red pepper flakes (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it preheats.

Prepare the Dough: If you’re using store-bought pizza dough, roll it out on a lightly floured surface to your desired thickness. If making homemade dough, follow your dough recipe instructions. Place the rolled dough on a parchment paper-lined baking sheet or a pizza peel dusted with flour for easier transfer to the oven.

Add Salsa Verde: Spread the salsa verde evenly over the pizza dough, leaving about an inch of space around the edges for the crust.

Layer the Cheeses: Sprinkle the shredded mozzarella cheese over the salsa verde, then dollop the ricotta cheese evenly around the pizza.

Add the Veggies: Evenly distribute the chopped spinach, diced red bell pepper, sliced red onion, and corn kernels over the cheese layer.

Prepare the Eggs: In a small bowl, crack the two large eggs and beat them gently. Create small wells in the veggie layer of the pizza and carefully pour the beaten eggs into the wells, ensuring they don't spill over the edge.

Seasoning: Drizzle the olive oil over the pizza and sprinkle garlic powder, cumin, salt, and pepper over the entire top.

Bake the Pizza: Carefully transfer the pizza to the preheated oven (or pizza stone) and bake for 12-15 minutes, or until the edges are golden brown and the eggs are cooked to your liking.

Garnish and Serve: Once out of the oven, let it cool for a couple of minutes. Garnish with fresh cilantro and a sprinkle of crushed red pepper flakes if you like a bit of heat. Cut into slices and serve immediately.
