1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/4 cup unsalted butter, melted

1 large egg

1 cup cooked sausage, crumbled (Italian or breakfast sausage works well)

1/2 cup diced Hatch green chilies (fresh or canned)

1 cup shredded cheddar cheese

1/4 cup chopped fresh cilantro (optional, for garnish)

1 tablespoon honey (optional, for a touch of sweetness)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a mini muffin tin or line it with mini muffin liners.

    Prepare Dry Ingredients: In a large mixing bowl, combine the cornmeal, flour, baking powder, and salt. Whisk until well mixed.

      Mix Wet Ingredients: In a separate bowl, combine the milk, melted butter, and egg, whisking until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
