1 lb boneless, skinless chicken thighs

2 cups hatch green chilies, roasted, peeled, and chopped

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 tsp cumin

1 tsp smoked paprika

½ tsp salt (or to taste)

½ tsp black pepper

2 tablespoons olive oil

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Avocado slices (for garnish)

Sour cream (optional for serving)

Prepare the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken thighs and sear them for about 5 minutes on each side until golden brown. Remove from the pot and set aside to cool slightly. Once cooled, shred the chicken using two forks.

    Sauté Vegetables: In the same pot, add the diced onion and garlic. Sauté for 3-4 minutes until the onion is translucent and fragrant.

      Combine Ingredients: Stir in the chopped hatch green chilies, shredded chicken, black beans, corn, cumin, smoked paprika, salt, and black pepper. Mix well to combine.

        Add Broth: Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes to meld the flavors together.

          Finish the Soup: Once the soup has simmered, squeeze the lime juice into the pot and stir well. Taste and adjust seasoning as necessary.
