2 cups cooked chicken, shredded (grilled or rotisserie)

1 cup Hatch green chilies, diced (fresh or canned)

1 cup black beans, rinsed and drained

2 cups tortilla chips (thick and sturdy for layering)

1.5 cups Monterey Jack cheese, shredded

1 cup sharp cheddar cheese, shredded

1 medium red onion, finely chopped

1 medium avocado, diced

1/2 cup sour cream

1/2 cup fresh cilantro, chopped

1/4 cup pickled jalapeños (optional for extra spice)

1 tsp cumin

1 tsp garlic powder

1 tsp salt

Juice of 1 lime

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken Mixture: In a mixing bowl, combine the shredded chicken, diced Hatch green chilies, black beans, cumin, garlic powder, salt, and lime juice. Mix until well combined.

      Layer the Nachos: On a large baking sheet or oven-safe platter, spread out half of the tortilla chips in an even layer. Then, sprinkle half of the Monterey Jack and cheddar cheese over the chips.

        Add the Chicken Mixture: Spoon half of the chicken mixture over the cheese layer, spreading it as evenly as possible. Add another layer of tortilla chips on top, followed by the remaining chicken mixture and then the remaining cheese.

          Bake: Place the nachos in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
