1 lb ground beef (80/20 for flavor)

2 cups cooked rice (white or brown)

1 cup Hatch green chiles, diced (canned or fresh, roasted for extra flavor)

1 medium onion, chopped

2 cloves garlic, minced

1 cup bell pepper, diced (any color - red or green works well)

1 cup beef broth (or water)

1 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese (or a blend if preferred)

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are softened, about 3-4 minutes.
