Hatch Chili Baked Breakfast Tacos

These delicious tacos combine the rich flavors of Hatch chilies, eggs, and your choice of meat or veggies, all baked to perfection in crispy corn tortillas. This recipe is not only easy to prepare but also incredibly versatile, allowing you to cater to different tastes and dietary needs. 8 small corn tortillas

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (can substitute with turkey or plant-based sausage)

1/2 cup diced Hatch green chilies (fresh or canned)

6 large eggs

1/4 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 avocado, sliced (for serving)

Fresh cilantro, chopped (for garnish)

Salsa or hot sauce (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Tortillas: Lightly spray a muffin tin with cooking spray. Gently press each corn tortilla into the cups of the muffin tin to form taco shapes. You can overlap them slightly if needed.

      Assemble the Filling: In a mixing bowl, combine the cooked breakfast sausage, diced Hatch green chilies, salt, and pepper. Mix well and set aside.

        Make the Egg Mixture: In another bowl, whisk together the eggs, milk, garlic powder, onion powder, and a pinch of salt and pepper until combined and frothy.

          Fill the Tacos: Evenly distribute the sausage and Hatch chili mixture into each tortilla cup, then pour the egg mixture over the top, filling each taco to the brim. Top each taco with a generous sprinkle of shredded cheddar cheese.

            Bake: Carefully place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the eggs are set and the cheese is bubbly and golden.

              Serve: Once baked, let the tacos cool for a couple of minutes. Carefully remove them from the muffin tin, serve with avocado slices on the side, and garnish with fresh cilantro. Pair with salsa or hot sauce for an extra kick.
