Ingredients

6 large eggs

1 cup whole milk

1 cup shredded sharp cheddar cheese

1 cup diced hatch green chiles (fresh or canned, drained)

1 cup diced Yukon gold potatoes (pre-cooked or frozen hash browns)

1/2 cup diced red bell pepper

1/4 cup chopped green onions (scallions)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

1 tablespoon olive oil (for greasing)

Chopped cilantro for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with olive oil to prevent sticking.

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and whole milk until well combined. Season with garlic powder, onion powder, smoked paprika, cumin, salt, and pepper.

Combine Ingredients: Stir in the shredded cheddar cheese, diced hatch chiles, pre-cooked or frozen potatoes, diced red bell pepper, and green onions into the egg mixture. Ensure all ingredients are evenly distributed.

Pour into Baking Dish: Transfer the egg and vegetable mixture into the prepared baking dish, spreading it out evenly.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the egg is set and the top is slightly golden. A toothpick inserted in the center should come out clean.

Cool and Slice: Once baked, remove the dish from the oven and let it cool for a few minutes. Cut into squares for serving.

Serve: Garnish with fresh chopped cilantro, if desired, and serve warm. Enjoy paired with avocado slices or a dollop of sour cream for extra flavor!
