Ingredients

1 cup natural almond flour

1/2 cup natural peanut butter (unsweetened)

1/4 cup maple syrup or agave nectar

1/4 cup cocoa powder (unsweetened)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup dark chocolate chips (dairy-free if desired)

Optional Topping: crushed nuts or a sprinkle of sea salt

Instructions

Prepare the Peanut Butter Mixture: In a medium bowl, combine the natural peanut butter, maple syrup, vanilla extract, and sea salt. Stir well until the mixture is smooth and fully blended.

Make the Chocolate Base: In another bowl, mix the almond flour and cocoa powder. Gradually add 2-3 tablespoons of melted dark chocolate chips into the mixture, creating a cookie dough-like consistency. If it's too dry, add a little more melted chocolate.

Line the Muffin Tins: Prepare a muffin tin by lining it with cupcake liners. This will help in removing the peanut butter cups once they're set.

Layer the Chocolate Base: Take a spoonful of the chocolate mixture and press it into the bottom of each cupcake liner, creating an equal layer across all cups. Use your fingers or a small spoon to ensure it’s evenly distributed.

Add the Peanut Butter Layer: Spoon the peanut butter mixture over the chocolate base, filling each liner until it is about ¾ full. Smooth the top of the peanut butter layer with the back of the spoon.

Top with Chocolate: Melt the remaining dark chocolate chips in a microwave-safe bowl. Drizzle or spoon the melted chocolate over each peanut butter layer, enough to cover it completely.

Chill: Place the muffin tin in the freezer for about 30 minutes, or until the cups are completely set.

Serve: Once set, gently peel away the cupcake liners and enjoy your guilt-free peanut butter cups! Optionally, sprinkle them with crushed nuts or a pinch of sea salt for added texture and flavor.
