1 pound fresh salmon fillet, skin removed and cut into 1-inch cubes

1/2 cup soy sauce

1/4 cup brown sugar

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon minced garlic

1 tablespoon minced ginger

1 teaspoon sesame oil

1 tablespoon cornstarch

1 tablespoon water

1 bell pepper (red or yellow), cut into 1-inch pieces

1 cup pineapple chunks (fresh or canned, drained)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Skewers (if using wooden skewers, soak in water for at least 30 minutes)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, minced garlic, minced ginger, and sesame oil until the sugar is dissolved. Reserve 1/4 cup of the marinade in a separate bowl for basting later.

    Marinate the Salmon: Add the salmon cubes to the marinade and let them marinate in the refrigerator for at least 30 minutes (up to 1 hour for more flavor).

      Thicken the Marinade (Optional): In a small saucepan, combine the reserved marinade with cornstarch and water. Bring to a simmer over medium heat, stirring constantly until thickened. Remove from heat and set aside.

        Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated salmon cubes, bell pepper pieces, and pineapple chunks alternately onto the skewers.

          Grill the Skewers: Place the skewers on the grill. Cook for about 4-5 minutes per side, brushing with the thickened marinade and turning occasionally, until the salmon is cooked through and has nice grill marks. Keep an eye on the skewers to avoid burning.

            Garnish and Serve: Once cooked, remove skewers from the grill. Garnish with sliced green onions and a sprinkle of sesame seeds. Serve immediately with extra marinade on the side if desired.
