4 ears of fresh sweet corn

2 ripe avocados

1 red bell pepper, diced

1/2 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 cup black beans, drained and rinsed

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

Salt and black pepper to taste

1 teaspoon chili powder (optional)

Queso fresco or feta cheese for garnish (optional)

Instructions
 

Prepare the Corn: Preheat your grill to medium-high heat. Husk the sweet corn, removing all silk. Grill the corn for about 10-15 minutes, turning occasionally, until charred and tender. Remove from the grill and let cool slightly. Once cool, carefully cut the kernels off the cob using a sharp knife.

    Combine the Ingredients: In a large bowl, combine the grilled corn kernels, diced avocados, red bell pepper, red onion, cherry tomatoes, black beans, and chopped cilantro. Toss gently to avoid mashing the avocados.
