4 slices of thick sourdough bread

1 cup ricotta cheese

2 tablespoons honey

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1 cup fresh peaches, pitted and sliced

1 cup fresh blueberries

1/4 cup shredded coconut (optional)

1/4 cup chopped walnuts (optional)

2 tablespoons olive oil

Pinch of salt

Fresh mint leaves, for garnish

Instructions
 

Prepare the Ricotta Spread: In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and a pinch of salt. Mix until smooth and creamy. Set aside.

    Assemble the Sandwiches: Take two slices of sourdough bread and spread a generous amount of the ricotta mixture on one side of each slice. Top one slice with a layer of sliced strawberries, peaches, blueberries, and sprinkle with shredded coconut and walnuts if using. Place the other slice on top, ricotta side down, to form a sandwich. Repeat with the remaining bread and fillings to create a second sandwich.

      Grill the Sandwich: Heat a grill pan or traditional grill over medium heat. Brush the outside of each sandwich with olive oil. Once the grill is hot, place the sandwiches on the grill. Cook for about 3-4 minutes on each side, or until golden brown and the fruit is warm and slightly caramelized.

        Serve: Remove the sandwiches from the grill, slice them in half diagonally, and arrange them on a serving plate. Garnish with fresh mint leaves and drizzle any extra honey if desired.
