Ingredients

2 cups fresh corn kernels (about 4 ears of corn)

1/2 red onion, finely diced

1 red bell pepper, diced

1 jalapeño, seeded and minced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon smoked paprika

Salt and pepper, to taste

12 small tortilla cups (store-bought or homemade)

Optional: avocado slices for garnish

Instructions

Grill the Corn: Preheat your grill to medium heat. Husk the corn, then place the whole ears directly on the grill. Grill for about 10-15 minutes, turning occasionally, until the kernels are charred and tender. Remove from the grill, let cool, and then cut the kernels off the cob into a bowl.

Prepare the Salsa: In a large mixing bowl, combine the grilled corn kernels, diced red onion, diced bell pepper, minced jalapeño, halved cherry tomatoes, and chopped cilantro.

Season: Squeeze the juice of the limes over the mixture, then add the smoked paprika, salt, and pepper. Toss gently to combine all the ingredients. Adjust seasoning as necessary.

Assemble the Cups: Place your tortilla cups on a serving platter. Spoon the grilled corn salsa into each cup generously.

Garnish (Optional): Top each salsa cup with a slice of avocado for added creaminess and flavor.

Serve: Enjoy immediately, or chill for a few minutes to let the flavors meld before serving.
