Grilled Chicken with Street Corn Sauce

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

For the Street Corn Sauce:

2 cups corn (fresh or frozen)

2 tablespoons butter

1/4 cup mayonnaise

1/4 cup sour cream

1/2 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 cup crumbled Cotija cheese

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Marinate the Chicken: In a large bowl, mix olive oil, lime juice, chili powder, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat them well. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Prepare the Street Corn Sauce: In a skillet, melt butter over medium heat. Add the corn and sauté for about 5-7 minutes until it’s tender and slightly charred. Remove from the heat and let it cool slightly.

      Mix the Sauce: In a large mixing bowl, combine the sautéed corn, mayonnaise, sour cream, smoked paprika, cumin, Cotija cheese, cilantro, lime juice, salt, and pepper. Stir well to combine, then adjust seasoning to taste. Set aside to let the flavors meld.

        Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Once hot, remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes.

          Serve: Slice the grilled chicken and plate it. Generously drizzle the street corn sauce over the top or serve it on the side.
