Grilled Chicken & Corn Caesar Salad

For the Salad:

2 boneless, skinless chicken breasts

4 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup croutons (store-bought or homemade)

1/4 cup shaved Parmesan cheese

1 tablespoon olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

For the Caesar Dressing:

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 tablespoon lemon juice

1 small garlic clove, minced

1/4 cup grated Parmesan cheese

Salt and pepper, to taste

Instructions
 

Prepare the Chicken:

    - Preheat your grill to medium-high heat.

      - Season the chicken breasts with olive oil, salt, and pepper.

        - Grill the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F/75°C). Remove from grill and let rest for 5 minutes before slicing.

          Cook the Corn:

            - If using fresh corn, grill the corn on the cob for about 8-10 minutes, turning occasionally, until charred. Then, cut the kernels off the cob. If using frozen corn, sauté it in a pan over medium heat with a bit of olive oil until warm.

              Make the Caesar Dressing:

                - In a bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, and grated Parmesan cheese. Season with salt and pepper to taste. Adjust consistency with a splash of water if it’s too thick.

                  Assemble the Salad:

                    - In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, corn kernels, croutons, and sliced grilled chicken. Drizzle the Caesar dressing over the top and toss gently to combine.

                      Serve:
