Ingredients

2 boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil (plus more for grilling)

6 cups Romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup cooked bacon, crumbled

1/2 cup blue cheese, crumbled

4 hard-boiled eggs, peeled and chopped

1/4 cup red onion, thinly sliced

1/4 cup balsamic vinaigrette (or dressing of your choice)

Instructions

Prepare the Chicken:

    - In a small bowl, combine garlic powder, paprika, salt, black pepper, and 2 tablespoons of olive oil. Mix well to create a marinade.

      - Coat the chicken breasts with the spice mixture, ensuring they are evenly covered. Allow to marinate for at least 30 minutes (or up to 2 hours for more flavor).

        Grill the Chicken:

          - Preheat the grill to medium-high heat. Lightly oil the grill grates.

            - Once heated, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

              - Remove from the grill and let the chicken rest for 5 minutes before slicing it into strips.

                Prepare the Salad Base:

                  - In a large salad bowl, add the chopped Romaine lettuce as the base.

                    - Layer on the cherry tomatoes, diced avocado, crumbled bacon, blue cheese, chopped hard-boiled eggs, and sliced red onion.

                      Assemble the Salad:

                        - Arrange the sliced grilled chicken over the top of the salad.

                          - Drizzle with balsamic vinaigrette or dressing of your choice.

                            Serve:

                              - Toss gently if desired or serve plated with the dressing on the side, allowing guests to dress their salad as they please.
