For the Cornbread Muffins:

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/3 cup sugar

1 large egg

1 cup milk

1/4 cup vegetable oil

1 cup diced green chilies (canned or roasted)

1 cup shredded cheddar cheese

For the Sliders:

1 pound ground beef (or turkey for a lighter option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Optional toppings: avocado slices, cilantro, jalapeños, or your favorite sauce

Preheat the Oven:

    Preheat your oven to 400°F (200°C). Prepare a muffin tin by greasing it generously or lining it with muffin liners.

      Make the Cornbread Batter:

        In a large mixing bowl, combine cornmeal, flour, baking powder, salt, and sugar. Mix well. In another bowl, whisk together the egg, milk, and vegetable oil. Pour the wet ingredients into the dry ingredients and stir until just combined; don’t over-mix! Gently fold in the diced green chilies and shredded cheddar cheese.

          Bake the Cornbread Muffins:

            Evenly distribute the cornbread batter into the prepared muffin tin, filling each cup about 2/3 full. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

              Prepare the Slider Patties:

                While the muffins are cooling, in a medium bowl, mix together the ground beef, garlic powder, onion powder, paprika, salt, and pepper until just combined. Form the mixture into small patties that are slightly smaller than the muffins.

                  Cook the Slider Patties:

                    Heat a skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side or until they are cooked through and have a nice sear. If you’re using cheese on top, add it when you flip the patties for the last time, covering the skillet for a minute to melt the cheese.

                      Assemble the Sliders:

                        Slice each cornbread muffin in half horizontally. Place a beef patty on the bottom half of each muffin, add your desired toppings (like avocado, cilantro, or jalapeños), and then cover with the top muffin half.
