2 medium potatoes, diced (about 2 cups)

1 small onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 cup fresh green chilies, diced (mild or hot, to your preference)

1 teaspoon smoked paprika

4 large eggs

Fresh cilantro, chopped (for garnish)

Prepare the potatoes: Place the diced potatoes in a pot of salted water and bring to a boil. Cook until tender, about 10 minutes. Drain and set aside.
