Garlic Parmesan Hasselback Potatoes

4 medium-sized russet potatoes

6 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder (optional for extra flavor)

1/2 teaspoon paprika (for a hint of smokiness)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Prepare the Potatoes: Scrub the potatoes under cold water to remove any dirt. Pat them dry with a paper towel. Place each potato on a cutting board. To achieve the hasselback style, make numerous evenly spaced cuts across the potato, about 1/4 inch apart. Make sure to not cut all the way through; you should stop about 1/4 inch from the bottom. Using chopsticks on either side of the potato can help prevent cutting too deep.

      Make Garlic Butter Mixture: In a mixing bowl, combine the melted butter, minced garlic, salt, black pepper, garlic powder, and paprika. Stir well to combine.

        Brush the Potatoes: Using a brush or a spoon, generously coat each potato with the garlic butter mixture, ensuring it seeps into the cuts. Reserve some of the butter mixture for later.

          Bake the Potatoes: Place the potatoes on a baking sheet lined with parchment paper. Bake in the preheated oven for about 40-50 minutes, or until the potatoes are tender and the edges crispy.

            Add Cheese: After about 30 minutes of baking, carefully pull the potatoes out of the oven and brush them again with the reserved garlic butter. Sprinkle the grated Parmesan cheese over the potatoes, making sure it gets into the cuts for maximum flavor.
