1 lb (450g) raw shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 limes

1 teaspoon chili powder

½ teaspoon cumin

Salt and pepper to taste

1/2 cup diced red bell pepper

1/2 cup diced cucumber

1/4 cup fresh cilantro, chopped

1 head of lettuce (e.g., butter or romaine), leaves separated

Optional toppings: diced avocado, sliced radishes, lime wedges

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the olive oil, minced garlic, lime zest, lime juice, chili powder, cumin, salt, and pepper. Add the shrimp to the marinade, toss to coat, and let it sit for 15-20 minutes.

    Prepare the Vegetables: While the shrimp is marinating, Dice the red bell pepper and cucumber, and chop the cilantro. Set aside.

      Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes per side or until the shrimp turn pink and opaque.
