Garlic Lime Shrimp Lettuce Wraps

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 limes

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 head of butter or bibb lettuce, leaves separated

1 avocado, diced

1 small cucumber, julienned

1 red bell pepper, thinly sliced

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the olive oil, minced garlic, lime zest, lime juice, red pepper flakes, salt, and pepper. Add the shrimp and toss to coat. Let it marinate for at least 15 minutes to allow the flavors to meld.

    Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp and cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove from heat and set aside.

      Prepare the Lettuce Wraps: While the shrimp is cooking, prepare the lettuce leaves by gently rinsing them under cold water and patting them dry. Select 8-10 nice leaves that can hold the filling.
